Red Lentil Hummus
Sebastian and I LOVE to cook together. Last night we got home late and we wanted to whip up a quick dinner so we made a quick smoothie and our favorite Red Lentil Hummus. I took some quick pics of Sebastian helping to make the hummus below. I'm still learning how to place pics on the page so bear with me. He usually uses his red cooking stand to help but, he demanded to sit on the counter to be closer to the ingredients. (His words) We have been cooking together since before he could walk. I used to keep him in his high chair and put the ingredients on his tray for him to see, feel, smell and mix. Now, when we cook he knows the names of all of our tools, grains, most foods and can name almost all of the spices and he knows them by smell as well. It's pretty freakin' awesome.
Sebastian knows that food is for nourishment and healing of our bodies and understands that we eat to feel good, not bad. Food feeds our soul and heals from within and when we eat foods that are dead or chemical laden (which I call Frankenfood) it starts slowly killing us from within. Have you ever eaten something and felt like absolute crap afterwards? Where all you want to do is lay down? Drink some ginger ale to feel better? Want to take a nap? Or have to run to the bathroom? Any of these? If you said yes, then the foods you are eating are dead and are slowly killing you. Over the years, I have slowly learned how to stop eating dead foods and eat to fuel my body for optimum healing and energy. That is how I am teaching Sebastian to feel about food.
When I was growing up my relationship with food was poor. I didn't know what real food was or what a correct portion size should look like. I was an obese child with a Preferred Customer Card to our family physician. I was ALWAYS SICK. I was ALWAYS on medications. I missed many days of school and spent a lot of time with sore throats, coughing and blowing my nose. NOT ANYMORE!!!! I can honestly say, that I have NOT BEEN SICK in almost 20 years! I do get an occasional head cold here and there and that's it! Our family treats our bodies right and our immune systems thank us by functioning properly.
Please enjoy our Favorite Red Lentil Hummus recipe below.
Red Lentil Hummus
Adapted from a recipe I picked up at Whole Foods
2 Cups of water
1 Cup Organic Dried Red Lentils
3 or 4 Organic Garlic Cloves (I love garlic - use to your taste)
3 Tablespoons of Organic Tahini (I have a recipe for this if you are interested)
5 Tablespoons of Organic Olive Oil
1/4 Cup of Freshly Squeezed Lemon Juice (Organic Lemons of course)
3/4 tea spoon of Organic Celtic Sea Salt (or to taste)
1 tea spoon Organic Black Pepper
Heat water in a pot over high heat until boiling. Add lentils and reduce to a simmer. Cook for about 10 - 15 minutes until the liquid has been absorbed. Cool the lentils a bit before handling.
If you have a vitamix (preferred): place lemon juice, olive oil, garlic gloves, salt and pepper in first and then lentils on top. Use tamper for about 15 - 30 seconds to blend until smooth.
If you have a food processor: Use blade attachment. Place garlic cloves in first and mince, then place lentils and tahini and pulse until lentils are broken up about 10 times. With the motor running, add oil, lemon juice, salt and pepper and blend until evenly incorporated, about 30 seconds. Scrape down sides of processor and blend some more until smooth.
We love this hummus straight from the blender or with our Favorite, Mary's Gone Crackers.

Inspiration
I listened to a very content rich inspirational talk this morning. I feel so empowered to keep moving forward with all of my goals and dreams. I know that I am moving in the right direction. MANY people have already reached out to me after ONE DAY of setting my intention. I know that I am here for a purpose to help others achieve what has taken me a lifetime to learn. I am not exactly sure how my blog will evolve yet and my wish is for anyone that happens upon my words is to be inspired and moved in some way. Taking a new direction
So It's been 2 years since I have posted. My life has been so incredibly FULL that I just have NOT made time to write. Originally, I started this blog just to write about my life and adventures as a CRUNCHY mom and now my life has evolved to me deciding to open my own practice and become a Health, Wellness and Nutrition Coach. I am currently working on becoming certified even though I am working with people now. Over the years my life has evolved from being the Morbidly Obese one to the "Go To Person" for health and wellness. It's been a pretty challenging ride which I will discuss in later posts. I have SO MANY people asking me for my favorite recipes for adults AND Children and how to eat and live clean(er). I'm constantly sharing my favorites as well as talking about the journey to how I got to this point in my life. When I look back to my childhood I NEVER would have dreamed I would be where I am today. This is a HUGE stepping stone to my future. A leap into the unknown which is pretty exciting!
I love to share my "Crunchiness" and why I do everything naturally, the reason why I chose to have a Home Birth, the fact that I not been sick except for the occasional head cold in almost 20 years, the fact that Sebastian has only had one head cold in the 3 years he has been on this Earth, the fact that we don't even keep Tylenol in the house, how I lowered my toxic body burden, the fact that I LOVE TO EAT and I know how to LIVE without weight gain, the fact that I lost 130 pounds 17 years ago and have COMPLETELY TRANSFORMED MY LIFE!!!!
I have renamed my blog from its original and will probably change it again. Who knows? That's how I Roll.
I am living a constant adventure with real twists and turns, come ENJOY THE RIDE!!!
I'm going to share one of my favorite recipes, I make it all winter long. Thankfully, Spring is just around the corner and down here in Georgia it Spring kinda has already Sprung and all of the people that I have shared this recipe with so far have fallen in LOVE with this soup.
PLEASE NOTE THAT ALL INGREDIENTS I USE ARE ORGANIC AND DAIRY FREE. I refuse to purchase anything that is not Organic and we don't have any dairy in our house.
Cauliflower Soup
You have to try this!!!!!! SEBASTIAN TESTED AND APPROVED. I just don't put any cheese in it for him since I try to keep the processed foods to a minimum.
I head ORGANIC cauliflower
1/2 red onion)
Tons of garlic (I LOVE GARLIC) I use 4 HUGE cloves.
2 Cups Organic Veggie Broth
Organic
Dried Thyme
Chives
Cayenne pepper
Black Pepper
Celtic Sea Salt (pink)
Cheddar Cheese (Daiya - Dairy Free - If Desired)
Lars French Fried Onions (Do not use French's brand - SO MANY CHEMICALS)
Cut up the cauliflower and put it in a pot on the stove with water about 1/2 way and steam for about 20 minutes. Saute the onions and garlic in ORGANIC EVOO until your kitchen smells so good you just can't stand it anymore. Drain the cauliflower and then put it in the same pan as the onions/garlic. Pour in some veggie broth a little at a time and see how much you want. You have the control to make this soup as thick or as thin as you like. Bring to a boil and let simmer for about 5 minutes. sprinkle spices to taste. The Thyme is the star of the show!
Once it is ready put everything into the vitamix and blend for about 30 seconds. VIOLA!!! Out comes the most unbelievable, delicious, creamy soup.
It tastes like cream of potato soup! Soooo, Put in your favorite soup bowl, topped with shredded DAIRY FREE cheese, sprinkle some chives and Lars French Fried Onions.
